Vegan Date Bars
- 1 cup water
- 1 cup dates, chopped
- 1 1/4 cups flour
- 1/8 tsp salt
- 1 1/2 cups oats
- 1/4 cup margarine
- 3/4 cup almond butter
- 1/4 cup sugar
- Preheat oven to 300°F.
- Melt butter in small saucepan. Add almond butter and stir until smooth. Remove from heat.
- Combine oats, flour and sugar. Add melted butter and press half of the oat mixture into a greased 9x9" baking pan. Bake for 15 minutes.
- Meanwhile combine water and dates in small sauce pan and bring to a simmer over medium-high heat stirring frequently until water evaporates.
- Spread date mixture over top of baked crust and cover with remaining oat mixture.
- Bake for 20 minutes. Let cool completely before cutting into bars.
I'd like to try this recipe, but have no clue how much 1/2 package of dates is. What brand and size are we taking about? Could you give me a cup, ounce or gram measurement instead? That would be helpful. Thanks! :)
ReplyDelete1 cup of chopped dates will do the trick. I have updated this recipe to reflect this measurement.
