- 1 small Napa cabbage
- 1 large carrot, grated
- 1 cup diced cucumber
- 1 bunch scallions
- 1/2 cup roasted peanuts
Dressing
- 1/2 cup peanut oil
- 2 1/2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 1 garlic clove, minced
- 2 tbsp chopped basil or 1 tsp dried
- 2 tbsp chopped cilantro
- Prepare dressing by whisking all ingredients in a small bowl. Set aside.
- Shred cabbage by chopping into strips. Toss with carrots, cucumber and scallions.
- Roast peanuts on high heat in a small frying pan. Shake consistently for even browning should take no more then 8 minutes. Careful not to burn!
- Add nuts and drizzle dressing. Toss before serving.
