It's that time of year that the Okanagan valley graces us with it's bountiful fruits such as the delicious Gala apples used in this salad.
- Romaine leaves, rinsed and spun dry
- Red seedless grapes, cut in half
- Gala apple, sliced
- Feta
Maple Dijon Vinaigrette
- 1/4 cup Grapeseed oil or other mild tasting oil
- 1.5 tbsp apple cider vinegar
- 1 tsp maple syrup
- 1.5 tbsp Dijon mustard
- 1 small clove garlic, minced
- 1 tsp parsley
- Whisk together all ingredients for the vinaigrette and set aside.
- Toss romaine, grapes, apples and feta.
- Drizzle dressing over salad.
Tip: Toasted, chopped walnuts would make a nice garnish for this salad.
